Well, the dealership repair shop replaced the instrument cluster again. And it solved some of the "chiming" issues.
The chime while stopping is gone, but I still have the mystery chime about 5-10 seconds after starting the truck. I've checked the washer fluid, gascap, and I've got my seatbelt on. There's just a chime and no light to say what the chime is for.
I feel that their instrument cluster angle is all wrong, because this is now the third instrument cluster that I've had the mystery chime on.
By the way, I've written a limerick about my truck. Here it is:

The owner did say “If it ain’t fixed today
It’s back to Detroit with this thing!"

Well, after returning to the dealership and letting them know that there still was a problem they called Chrysler.
The single chime problem was letting me know that it was time to change the oil, even though I had just changed it.
In case anyone else has the same problem, here's the fix:
1. Turn key to second click (don't turn on engine)
2. Depress accelerator 3X
3. Turn key off
When you restart the vehicle, the chime will no longer sound.
that sux to hear that you went through so much trouble for it to be something as easy as that. thats why i think ill stick to my 1st gen, not as much electronics and crap
