Soldier, I have the same wheel package as you, because I have an ST as well....
Here are a few pics of my truck with 265/75s on the same ST 16x7 steel wheels that you have (this is BEFORE I installed a lift kit)...
You are running 245/70 R16, so the new 265/75s will have a 1" larger sidewall (and a 2" larger total diameter), providing you an extra inch of ground clearance. Your speedometer will be about 7% too slow with the larger tires, but any Dodge dealer will be able to adjust the trucks speedo/odo for a small fee, and it does not void your warranty. I think it cost me $45 for them to do the adjustment, and its dead on now. So I clock the correct mileage and the speedometer is dead on.
I also have a 6 speed manual and I love it, that 6th gear comes in handy on the highway.

Well the size is good, but the brand, eh. There Chapparel AP. I got them dirt cheap at like $68 bucks a tire at intercity tire. There not the greatest. I am switching the BFGOODWRENCH all terains, i already have 2, im just waiting for these to wear out.
V6 6spd ST's are the sh*t! The transmission makes the V6 much more acceptable for a truck the size of a Dakota.
I have National Commando 265/70 16's. I give them a solid B, whereas the stockers are a D. For next winter, I'm buying at least a pair of studded snows for the rear. I blacked my rims out with some Duplicolor wheel paint.
If you use a Scotchbrite pad to scuff the wheels up, the paint sticks very well. I'm going to redo my rims and grill the next chance I get, but with some matte clearcoat this time to further prevent chipping.
