I put the "towing package" on my Ram last year. It was really easy.
Buy the Mopar hitch. It takes 20 minutes to install. DON"T CUT the rear bumper plastic. Just pop it up. It is rated at 600/6K ball mounted and 1200/12K WD.
Also buy the Mopar wiring for the 7 pin. You have to solder one wire into the reverse light and run the wires. Super simple. It took me about 1 1/2 hrs because I was so **** about running the wires and securing them properly. It is a nice quality set and everything looks factory when you are done. So far no problems with either piece.
All and all I had about $165 and 2 hours of my time into it.
As far as the ebrake controller, just go with a known name as there are many good ones on the market.
