Another note. to get the strong gamey taste out of geese, it's important to marinade it. Even if I'm just gonna pan fry it, a half hour of sitting in a bowl with a can of Coke poured over it will make a night and day difference.
Just make sure it's not diet Coke, you need the sugar to generate the acid that tenderizes the meat and take the gamey taste out...

Cajun taters:

5 or 6 large taters
2 cups colby jack cheese
one bunch green onions,
olive oil
cajun seasoning (i prefer tony cachere's)
6 to 8 strips, thick sliced bacon

wash taters and slice thin, rounds
coat baking dish with olive oil, place taters in dish, in layers, drizzle olive oil over taters and season between each layer of taters.
bake at 400* for one hour, or untill taters are soft, stirring onece.
fry bacon, crisp.
Onece taters are done, cover with cheese and place back in oven untill cheese is melted, crumble bacon on top and add green onions (chopped fine)

serve with a dollop of sour cream

Couldn't pass up posting this, figured this is a good section for it...

What's the difference between zoos in the north and zoos in the south?

In the north, they post the name of the animal, the scientific name and a brief description.

In the south, they just put the name and a recipe...
