Default Dakota wheels/tires

I recently purchased a lifted 96 Dakota 4x4. She came with some very nice 18 inch chrome wheels and what tires designed for street driving, and not so much off road/snow work.

I am interested in selling/trading the 18" rims/tires for some stock 15" wheels, and putting new tires with a tall profile on the truck.
My question is, how tall and how big can I go with tires on the 15 rims?

I dont want to loose too much height, and I dont want my truck squatting.
