why is my oil temp so high

1. That would be oil pressure not temperature.
2. What weight oil did you use? How much oil did you put in? Changed the pcv valve and or breather lately/ever?
3. Could be a bad sensor, though I can't explain why it went bad at time of oil change. I don't know 100% but there should be some type of check ball/valve in the oil pump that regulates pressure, if it is sticking that could cause high pressure.
My 2 cents.

My 95 Dakota club cab 4x4 318 (176,000 miles) runs about 55-60 lbs running down the road with 10-40 in it. I just pulled an idenical donor 95 on a toter from Laverkin Ut to the southwest corner of Wyoming and the oil pressure stayed the same even on some long step grades (3 to 6%) where it was bound to get warm.
