Substitute Rims
What are some nice 5x114.3 15" Rims for early Daks from other vehicles? Something with the same offset/backspacing? I see plenty of Toyota, Jeep, Honda, Dodge rims on Craigslist that are 15x6 or 15x7 with the 114.3 lug spacing...Anyone been there done that?
Also, on some of the wheel OEM replacement sites they list an OEM 16" tire for 1990 Dakotas? I didn't think any came with a 16"?

I don't think there were any 16's offered, I'd be very surprised if there were. You might want to look at some of the wheels that came on some of those other Jeeps and Dodges. I'm running 17" five spoke wheels from a Dodge Nitro. The Nitros and (I think) the later Jeep Patriots, had a similar offset to the 1st gen Daks that doesn't have the wheels sticking out so far. I also found some 5 spoke 16" Cragars that have a medium offset. I was going to use them but the Nitro wheels seemed more appropriate for a 4wd truck.

For the first - if you look at a listing such as http://www.roadkillcustoms.com/hot-r...TA+%26+DURANGO , they'll list those with the bolt pattern and help you find ones with the proper center hole diameter. As for offset - that's a bit more complicated, not all list offset on that list, alas.
But that gives you a start, at least!
As to the 16" wheels - I dunno, but I've seen a few in the boneyard of the 5 lug in 16", so if they didn't, then there was a fit-as.

I put jeep wheels on mine. The wheel size is 15x8. I used 255x70x15 tires. Pulling from memory, I think the tires were about 1/4in taller and 1 in wider then the orig. 235x75x15 tires that came on the truck.
Now, when I measured the jeep wheels and compared the measurements to my orig. wheels, I thought it was 1in deeper on the offset, so I thought it would put the tire footprint in about the same place as my orig. setup. But looking at them on the truck, it appears they set out more.
I can tell you that I can make them rub on the inside if I cut hard. Its not much, but they are closer then the orig. wheels.

If you want, I can try to get some measurements of what the actual offset is and post them up.
Now, when I measured the jeep wheels and compared the measurements to my orig. wheels, I thought it was 1in deeper on the offset, so I thought it would put the tire footprint in about the same place as my orig. setup. But looking at them on the truck, it appears they set out more.
I can tell you that I can make them rub on the inside if I cut hard. Its not much, but they are closer then the orig. wheels.

Heh. I've got Jeep wheels on mine also; I'm looking for a RamsHead piece to replace the Jeep center on the center cap.
I like your original wheels, but then, my 1988 came with the plain jane steel wheels, plastic center cap held by the lug nuts, and a "beauty" ring.
Mine's a 2WD, so I'm probably only going to go to 235/75R15's to keep my weight capacity I'm supposed to have (I'm on 215/75R15 P-series now; I can't load it up to max weight because it's supposed to be LT215/75R15Ds on it.)
