RE: anybody running a 160 thermostat?

I run a 160 degree in my 5.2 with no problems. It's a club cab Sport 4x4, 2" lift with 32" BF Goodrich TAs. I've added several mods including MSD ignition, Edelbrock intake, TB spacer, headers and most recently SuperChip programming. The 160 was recommended when running the performance setting to help control pinging. I've had no issues with spark plugs, performance, etc.
I'm not sure what you would gain or what benefits would be on a stock engine.

160 will keep the ECU in warm-up mode, because it's below what the factory considers to be a proper temp. You're probably running rich.

180 is your best bet. 195 is stock, and it's that hot because high engine temps tend to reduce NOX iirc, so it's better for emissions. 180 would be better for performance.

the 160 is going to keep your truck running in the open loop. this is not recomended.
