The 3.75" backspacing will stick out plenty enough if you ask me. The 2.5" ones will stick out 1.5" further. Its up to you, but I would go with the 3.75" without a doubt. The further they stick out the more wear on wheel bearings and ball joints, which have a hard enough time with the stock wheels as it is.
Without knowing what rim you have and the specs I cant tell you how much further the new ones will stick out. If you have the stockers, the 3.75" ones will most likely stick out about two or more extra inches on each side.

yeah and besides replacing your wheel bearings constantly, they should also do a good job throwing mud and stones everywhere including all over your truck chipping the hell out of it and speeding up the rusting process... and they are more likely to rub when turning while offroading... Ask me how I know. also in many states like new york you can get pulled over and ticketed for them. Just throwing that out there...

Most of the people i used to rock crawl with ran there 35x 12.50 wide meats on a 15x8 rim. Never had a problem with poping a bead. A 15x8 rim with 4.00in backspacing would look best. Watch your wheel bearings
