Your Truck looks great!
I was thinking of doing about the same thing. Just a 2.5" leveling in the from and i wanted to use the stock 20's and put toyo open country mt's on them..... How "bad" do yours rub? any suggestions for wheel adapters? have you used them and did they eliminate the rub? Ohh yeah almost forgot... I love the in-dash video..... How hard was that to get it installed? do they make a kit to fit the double din or did you have to have it custom made...

Big Rubber = NEW WHEELS
Not trying to throttle anyone up, but the 'wheel spacer' stuff is junk and the factory wheel has no offset/backspacing and is technically too narrow (is is 9 or 9.5) to comfortably seat the big nittos, toyos etc which call for a minimum of 10. I am not just talking here --- I have same set up -- levelling, blocks, etc etc etc --- and till I bit the bullet and bought new 20x10 with big offset the truck always had rub in there --- especially when 'articulating' or even taking a 90 turn in town! don't believe me -- watch your a-arms and your tires kiss each other mile after mile. Great looking truck. Get some wheels bro.

Wheels Make Huge Difference(not looks - performance b/c of moving wheel OUT)
Ultra has some sick wheels for great price with big layouts (20x10) and lotsa backspacing your tires [mine are mud grapplers] jump out 2-3 inches from the truck - out from the a-arms - out from the wheel wells -- out from things getting torn up in there. Here's the ones I bought:

Ill try and take some pics and post.

According to Nitto a 9.5 is not only fine, but it is the sixe they used for measuring this exact tire.

I also have more clearance from the A-arm with my wheel adapters and these tires than I had without them with the stock tires.
If I get wheels in the future I would get 17's.
