No...the emegency brake wouldn't work. If you don't want to mess anything up, don't do a burn-out. If you DO do a burn out, make sure there is NOBODY else on the road.
The way I do mine is to hold the brake pedal just enough so the truck doesn't move.
Alternatively, you can get a line lock for your front brakes (around $300 if I remember right) that will lock your front brakes in and allow your rear tires to spin freely.
