I'm just wondering if a 2001 Dodge Dakota v6 engine will go into a 2000 Dodge ram

I know all of the 5.2 and 5.9 magnums will bolt in. Biggest problem is you need to eliminate the mech. fan. and install electric fans in front of the radiator. BTW that is the way Shelby did with the Shelby Dakota's.
But the magnum exhaust manifolds work, and you can use the stock 5.2 92-96 dakota exhaust.

Edit to say, Sorry, I posted in the wrong place

If the Ram originally had a V-6, yes. V-8, well, it can but you'll need to change a lot of wiring and sensors because of a different # of cylinders.
