Default Thermostat replacement

I have a 1997 Avenger ES 2.5 and need to change the thermostat. I would like to know where it is located and will I need a paper gasket for the housing and a rubber seal for the thermostat itself.

What temperature is OEM 170 or 180?

I was looking to replace my thermostat with a Stant Super Stat but see they do not make it in 180 degrees. Could I use a 170 degree stat? The car has 150,000 miles and we live in Columbia, SC where it does get hot in the summer and cold in the winter. If not, what brand thermostat would you suggest.
