yes it gets dirty and breaks down due to heat like everything else, brake fluid should be replaced too because it develops acid in the lines i would change them every 30,000 miles

How would you go about changing these fluids to make sure you get max fluid change especially the brake lines? I have heard of machines that do it but is it something that can be done at home or should it be done in a shop?

Brakes are simple, you can do it in your driveway. Just a normal brake bleed on all 4 wheels until you get clean fluid.

Powersteering can be changed by a machine. I think you can open the line and drain it. What I have done is get a shop vac and suck up all the fluid and refill. Run the engine to mix it all and vacuum it again, do it a few times and you should have it all 99% clean. I think I got water in a while back, I had bad time turning. After cleaning it was good. Turn the steering wheel back and forth lock to lock to get out the air in the lines.

Diffs remove the covers.

Auto Transmission remove the pan. Manual Transmission I believe there is a drain plug.

Transfercase there is a drain plug.

Windshield washer fluid, take off and dump, it can be used enough that it doesn't need it.

Radiator has a drain plug. Don't forget the reservoir tank, dump it over.

Engine oil, do an oil change.

Clutch master cylinder is the only non serviceable fluid. Don't attempt to change it. It is best to have fresh fluid but the only way is to buy a new system.

Thanks Crazy 4x4RT but i was thinking of using a turkey baster, works like a battery acid tester, as i think it would be cheeper than a shop vac filter. I am planning on doing a trans filter and fluid replace as well as adjusting the bands soon. Oil and filter were just done when i had my oil pump replaced in Nov. but they will be done again next month. Thanks again for the advice.

Depending on your shop vac, it can do it. That is what most are made for wet/dry material that are found in shops, again it depends on your vacuum.
