Should I replace the o2 sensor since I will be gutting the cat? And with what brand of sensor and from where?

If you dont have any problems with it just leave it. the sensor is before the cat so its not going to mess with it.

Good advice if its not broke dont fool with it. if at sometime you ned to replace it or any other sensor I would get it from the dealer.
