Default AC/Heat Control Assembly Question

When depressing the AC button that consequently lights blue, does this stop coolant flow through the heater core in normal operation?

If yes, is this a vacum or electronic signal? Where does it physically stop the flow of coolant?

No it doesn't stop the flow. You can put a valve in line of the heater core in the engine bay. Thats what I did during the summer. My def/dash control door is broke and put a valve in cause the heater is stuck on.
