Post 1991 Dodge Dakota not staying running

Currently I have just fixed this truck which is a 1991 dodge dakota with 2.5 OHV engine. 5spd manual. The oil pressure was going under 20psi (lowest was 12psi). So I changed it what a fun job that was. Tryed to start the trk and it wouldnt start so we changed the plug wires, spark plugs, and distirbuter cap and rotor they were due any way, still no spark. Finally I called checked the timing and turns out it was way out due to the oil pump splines with the cam shaft not the distibuter and it was knocked out of time which haynes and mitchel on demand said nothing about checking timing after pump change. So I did initial timing got the engine started adjust timing to 0 degress tdc per both manuals and was running good took test drive oil pressure showed 20psi at idle and min 40-60psi going down the road 50mphs and no issue after that. So i called it wrap!

But now the next day it was being driven and it dies going down the road and had to fight it to start again and im at a loss of whats goin on. Does any body have any ideas?
Also now just found out that the trk just blew all the antifreeze out so a non related issue is occuring hear as well. Please shoot me at some ideas im gonna check the water pump and thermostat and go from there on that.

im not real familier with the 2.5 but i know if a cam or crank sensor goes bad or loses a ground then the motor will stop running cause they are part of the whole timing system. Also a ignition module will cause a motor to stop on a dime. But usally when they go out you wont be able to start it back up until the motor cools down to pretty much outside temp. i will look through my haynes manual and see what i can come up with for you.
