I'd say tear down the DOHC and build it right - from the inside out. Then swap it when it's ready. Less down time.
You'll always be able to do more with the DOHC engine than the SOHC.
However, if you have an automatic in the new car and plan to keep it, stick with the SOHC... The DOHC doesn't make power until after the atx shift points, so the SOHC ends up being faster.
However, if you plan on going turbo (seriously plan, not just thinking about maybe doing it someday if you can find the time, money, etc.), go back to the original statement - DOHC is more tuneable...
