Exclamation Gotta Love electrical

Yeah I'm back. With a new confusing problem. Ok, I'm sure we all know this truck by now, the 73 D100 W/ 360 auto. Well finally got it charging, was doing great with the new alternator. So I was driving it through good ole Fall Creek Falls when I noticed the ammeter jumping from charge to the middle and back. But I noticed it only does it while I'm giving it gas or when its at a high RPM. from idle to about 1500rpm it goes to charge and stays there. Its not running rough or dying or spitting and sputtering. just does the ammeter jump, and i know its not charging during these times because I pulled the battery cable off and, like clockwork, up to 1500rpm it ran fine. As soon as it jumped, it died. So i was wondering what could cause this and how to fix it. I've already tried all my connections. So now what?
