walking around the truck i noticed the roof above the windshield is rotted through. my question, does the entire roof lift off the rest of the cab to make repair a bit easier?

No, there are a few posts on Diesel Truck Resources and Ramcharger Cental where folks have cut the outer layers of the roof and repaired it. Here is one I have book marked.

The roof is welded to the rest of the cab. While I've seen 1 post somewhere on the internet where someone replaced the entire roof it is very difficult to get it lined back up properly again even if doing it from the factory welds.

 

Sounds like a good time to make it into a convertible
