Default 2008 Avenger transmission and other systems

I have a 2008 Dodge Avenger RT that I have made into a oval track race car, my previous car was a 2009 Charger with the 5 speed automatic, the Avenger has the 6 speed automatic that is shiftable, with the Charger I put the transmission in 3rd gear and it raced very well, I was turning 4700+ RPM at speeds between 65-70 on the backstretch and I was driving very well in the turns, we are not allowed to test our cars with the class I run in so I won't know how well the Avenger will race until race day. MY question is, will I be able to select a gear and race in that gear without having to worry about shifting (when I put it in the gear that races the best will it stay there or will the computer shift me up and down as it see's fit?) with the amount of cars and the size of the track I don't want to worry about what gear it's in. On the bigger track we will race later in the year the shiftable tranny might give me an edge over other automatics.


Another question, my seatbelts have been removed (I have a racing seat with racing belts attached to my roll cage) can I pull a fuse to keep my seatbelt chime from going off?

And one more, my TPMS sensors are not installed, can I disable the TPMS warnings?

We are supposed to be 100% stock, (engine, transmission, suspension, air intake, tire size, etc) but some of the teams we race against are running V6 Acura's with a tuning shop as their sponsor so you know they have performance tunes, is there a tune that I can add that will not be visible to the scanners that tech uses to make sure we are stock. I have never had to be teched yet outside of my initial safety and compliance inspections. I have done some research on my fuel, it seems like I can run up to 100 octane for best performance, will my stock setup handle the 100 octane? I raced the Charger on 92 pump gas and it ran pretty good (the Charger was involved in a wreck and was totaled, only a few engine parts were able to be used with my Avenger so I am not sure how well the Avenger will race)
