V6 and V8's get about the same mpg. and the V8 has alot more power. I guess it depends on what you will be using it for.

try and find one with the 4.7 v8 lots of power and i average 17.5-18.5 so far just got it about a month ago for 10k with 91k miles. I paid a little much but it has brand new tires, shocks, ecm/computer, and tps. I like it so far ill like it even more once i get rid of the annoying ticking noise it has from a valve or lifter or exhaust leak not sure what it is yet but other than that i love the truck good luck finding one.
