Default Error code P1281

Driving home from work today, i noticed my check engine light came on. I took it to Autozone to have them run a diagnostic code reader on it. The lady said it was most likely an O2 sensor that had gone bad. Ive done some homework however and found that this is a pretty common error, however the problem isnt an O2 sensors its the PCM saying that the truck has not warmed up fast enough to its liking. For the past 3 weeks my temp gauge has shown it to run extremely cold, the needle doesnt even make it past the first bar, its usually about 2\5th the way up, and now its barely like an 8th the way up. should i continue to chase the thermostat sticking open or chase the autozone route.

i would start with the thermostat, its the cheaper way out and that would make the most sense

GREAT NEWS! bought Thermo for $20, Antifreeze for $13, took me an hour just to find the drain for the radiator, after a mouth full of antifreeze and a eye full of dirt, i got the radiator drained, took off the upper resevoir, unfastened the upper passenger side radiator hose, and BROKE the lower bolt that holds the thermostat housing on, the bolt is still in there, i'll be driving my wifes uplander to work tomorow, but there is about a quarter inch of thread still sticking out of the housing, its too stiff to grab with vicegrips, so i'll probably have to drill it out. Dodges sure arent designed to be friendly under the hood.
