Default Cooling system problems

Ok i have a 2000 dakota with the 3.9L and 68K miles. For the past four months i have not driven the truck much because I have a motorcycle and am only putting about 20 miles a week on it.

I have had to drive it all week and it has be heating up slowly, like 45 degree weather and at the end of 7 miles i am just hitting 130 degrees. Today i parked the truck when it was at normal operating tempter which is 195 degrees. After five hours i get in the truck on in about 2 miles when i was going 55mph the temp. started to shot up past 210 degrees.

I have lost some coolant and can smell it burning. All the heater and radiator hoses seem to be soft.

It looks like I may have a leak where the heater hose fitting goes into the water pump, there is a little coolant around the fitting there.

Many have said T-stat, and think i will replace it but before i do that does any one have any ideas of things to check before i start replacing parts.
