Default Rough Idle And Won't Accelerate

Hello, total noob here, and was wondering if anyone could offer advice.
I have a 2002 Dakota Crew Cab, V6 automatic with almost 70,000 miles on it. Recently we had the O2 sensor replaced and a tune up done. I drove it yesterday and after about 80 miles, it started idling rough. Then it wouldn’t accelerate, I had to press the peddle all the way down to barely get 30 MPH, then it took another 4 miles to reach 70 MPH, the RPMs were over 5000. At that point I backed off and just poked along with the flashers on. Also engine acted like it didn’t want to shift. To add insult to injury, it smelled like an electrical short or fire, but I didn’t see anything under the hood. I drove it later (back to town to drop it off) and it idled rough, seemed a little sluggish, but I didn’t have near the issues I had earlier.
It is currently in the repair shop and the techs there say they can’t find a thing wrong with it. The computer shows nothing and they don't think it is idling rough.
Has someone heard of this happening before?
I warn you what I know about the inner workings of cars and trucks could fill a shot glass.

yep could be a clogged cat. Could be a vacuum leak. Could be lots of things... fuel pump on its way out, ignition system problems... Could be that you got a bum O2 sensor.

Pretty much all of that stuff should throw a code, though....

Hmmmm. I figured that the list could be endless. The truck sat for 2 weeks, before I took it out (it is a recreational vehicle and sits for weeks at a time). Could condensation in the tank or lines cause this problem?
