Default Sudden power gain need help

I have a 1999 dodge Dakota, recently I noticed that rarely the truck will get a crazy power boost and will drive much faster than it usually will for the remainder of the trip. It will backfire much more when I let off the gas pedal as well. My question is wether anyone knows why this is, or if I could somehow make it stay this way.
