Default Replace 2004 Hemi with a regular V8 Jasper?

Like so many, my '04 Durango hydrolocked the morning after a heavy rain. Engine is toast. I'm being quoted $7500 for new Jasper and labor. My father-in-law bought it new to pull his boats. I inherited it about six months ago.
My question is: can I ask the shop to replace the engine with something less powerful and less expensive (and only 8 plugs), or do I need to stay with a direct replacement?

And will a new engine fix the water problem, or do I need to have them replace the windshield cowl too?

Thanks - I'm good in the woodshop, but not in the autoshop!

By the time you pay for all the crossover. It will probably be more than what you would pay for just the R&R of that engine.... And Jasper Does have a decent Warranty....
