Despite what my user name says, I have a 2002 Intrepid ES with the 3.5L standard output and had the dealer perform an oil change. After I got back and was about to file the receipt away, I noticed they put 5W-30 in there. My question is since the "Engine Oil Viscosity Chart" lists that the 10W-30 is preferred for temperatures from 0 degrees F to beyond 100 degrees and 5W-30 is only allowed for 32 degrees F and lower, and the current temperature is in the 70s and is going to only get hotter and hotter as the months roll along, is this going to cause and problem and what should I do to avoid it?

I talked to a few people who said it won't be a problem, so my question is if it isn't going to be a problem, then why don't they recommend 5W-30 to begin with as an option?

It's not a problem, just change as normal later. The lower viscosity oil is for cold weather because the oil gets thick and can't flow properly in cold weather untill it's warmed up.
