I heard that you have to recalabrate the computer so it adjusts the fuel output when you add a cold air intake because of the added air comming into you intake. and then again when you add an exhaust. is this true?
no, the comp. adj itself according to the exhaust temp and fuel levels in the exhaust gasses. It is measured by the o2 sensors in your manifold and cat.

they are good at a lot... but nothing performance wise. It will moniter the exhaust temperature gas and re-adjust back to optimum ECONOMY, and never porformance.
You will see a good gain though so dont be discouraged. Just understand you can't get the full benefits with our ECU.
But yeah our PCM's suck...R/T software is much better but it still sucks, but thats besides the point. You'll still see gains from a CAI and exhaust and you wont need to adjust anything...
