ide go with t-stat, then clutch..... my chevy did the same thing cause the clutch was done another thing to try, while you have the tstat out flush water in from there kinda forced crud outa weird places.... had like brown mud comming out of mine last time i did on my chevy lol...

Flushed the system today and that wasn't the problem. Next step is the t-stat. And if that doesn't work then I geuss I'll try the fan. On pavementsucks.com's tech page he shows how to change the clutch on the fan. He stated that he had to change it after he started to have temp spikes and that is similar to the syptoms I'am having. Any other ideas before I take this thing to the shop?
yeah, forget the shop, take the next steps and go from there.

UPDATE: With some help from my wife, I changed my thermostat this evening. I swapped it for a 180 degree thermostat. I drove it for 15-20 minutes with no temperature spikes and the a/c full blast.. The real test will be tomorrow in the hot weather to make sure that really fixed the problem. Thanks for putting me in check Steve.
