Probably your Throttle Positioning Sensor (TPS).. The overdrive engaging/disengaging is one of the problems this sensor can cause when it goes bad. Doesn't cost much and very simple to replace. Your truck is old enough to have it go bad.
I would change it, as it will help you in many other ways as well. It can also help with hesitation, stalling, throttle response, bucking, etc...

Before changing out the TPS, also check into TSB's for your year truck. There is one out there about trucks randomly going into and out of Overdrive, which is linked to worn insulation in a module in the transmission, which causes the wire to ground on the case. It can be fixed by wrapping the exposed area in electrical tape and I believe it is re-routed inside of the transmission.
