Default Stalling...help?

I started on this forum with this problem and have been around the block and back.
My truck stalls when warmed up...typically after a decent drive.

I have cleaned the throttle body, IAC, TPS, and this seemed to help for a bit, but then it started again.
Next step...I replaced the IAC with one from Summit( SMP ), as well as the cap, rotor, plugs, and wires. I took it for the test drive and thought everything was great until it stalled again. I don't necessarily think it's the IAC as the new one is doing the same as the old one.

Something else... I often smell coolant, although, there isn't a leak. Last summer I replaced the water pump and lower hose. I passed on the bypass hose and the upper hose as I didn't want to get involved with the accessory drives, brackets, and whatnot. That was before I discovered this forum.

Lately, I see the temperature gauge cycling slightly above and below normal...never getting hot, though. I was wondering if this temperature fluctuation could be causing any problems relating to my stalling problem. My next step is to replace the thermostat with a 180 degree unit.

Any ideas or help will be greatly appreciated. Thanks!
