A Haynes manual is the best $14 you will ever spend. It has the correct torque values and the correct tightening pattern that matches the service manual(I have both).

The new plenum cover will come with a new plenum gasket.
I highly recommend that you do the Kegger Intake Mod
I think it is also a good idea to run a can of Seafoam through the motor to clean out any of the oil particles that were left in the intake when the plenum was blown.
Put tape on the cylinder head intake ports to keep trash from entering the cylinder head while the intake is off.

I havent been at the dealer for a while now, but im pretty sure they charge $90/h. So $414 minimum, $486 max. plus tax. some of you guys that are good at this could make a decent dollar out of your garage.
