Yea it will help tune. But a wide band will work better for tuning.

Transmission temp if anything, but I wouldn't worry about it unless you're gonna be towing multiple times a week.

I might buy the trans temp, oil temp, and a vac gauge now and buy the A/F when I buy the cam.

Curious on a few things

Is this 30' enclosed trailer a gooseneck or standard V hitch?
Exactly how much does the trailer weigh?
What are you racing & whats the estimated weight you will have inside the trailer?
Your truck has a 7700-7800lb max trailer rating depending on which motor you have.(96 advertized rating, maybe less for 95)
Most 30' enclosed trailers are in the 4400lb+ range depending on options. If all aluminum ($11k or more) will be 3300+lbs.
If your putting a car in this trailer then you are going to be close or over your tow rating.
Another big issue is the length of this trailer.
18' truck towing a trailer that is 36' long (standard V hitch) will be dangerous if you have to hit the brakes hard in a corner.
The trailer will control steering more than the truck will.

Sorry not trying to be a dk here just hate to see you get into a bad situation you could of avoided.

Its was a bumper pull v nose box trailer all that was going to be in it was dirtbikes. most of the time it would have been pulled with our 2500 cummins. But did not buy it.

Probably ok wt wise depending on just how many bikes & how much gear you have.
Length of the trailer will be a concern, wt distribution is a must & swaybars would be a good idea if you want to be able to control it.

I have a wt distribution hitch and sway bars. we have a 36 ft bumper pull camper twin slide outs. I will just use the hitch and sway bars from that.

just my viote, id do trans temp, diff temp, and whatever 3rd one u want, those 2 are important for towing. just my 2 cents, if if ur towin who cares about a vacuum gauge unless its just a filler till u get ur air/fuel guage, so my 3rd would be a oil temp gauge. sounds like the best combo for ur towin.
