with 360 heads off a 1965--1968 Plymouth Fury fit on my 1998 dodge ram? or is it different blocks

No. Those are LA heads. You need Magnum heads.

Anyways, I think the 360 didnt come out until 1972.

no, i don't think so. i think the heads and manifolds are all just a little different.

edit - i type too slow.

Yeah if thats a 360 its not original. According to Allpar.com the 360 did not come out till 1971. Whatever LA is in there they will physically bolt to your magnum block but a lot of other things will have to be changed.
