Dont waste your money on E3 plugs. You will never see the gains make up for the price. Your truck will run just as good or even better on a set of Champion Copper or NGK V-Power plugs.

could just be your O2 sensors.

If you change your cat, you should change your O2 sensors. Just doing one not the other is like taking a shower and washing your armpits, but not your crotch.
