I think im still running hot.....

so I havent changed my t stat yet which is why it raises to 230 then drops back down right after I start it but my stock gauge shows it sitting just a hair over 200. every once in a wile it will go down to 190 but then goes right back to a hair over 200. how accurate are the stock gauges?
