Sounds like a sticky IAC is the most likely culprit. Somewhere hereabouts there's a thread about cleaning those.

seems like I remember mine doing that when I had a vac leak in one of the hoses that goes from the canister on the frame to the solenoid under the hood. If I remember correctly, I replaced the IAC first and kept the same symptoms.

Idle Air Controller. It's a solenoid valve on the back of the throttle body -- like a sensor, only it doesn't sense anything at all.

All it takes to clean the thing is some sensor safe cleaner (MAF cleaner in a spray can), some paper towels, cotton swabs, and a T-25 driver. Unless of course you tear the o-ring, then you'll have to replace it. It's cheap and easy, doesn't take too long unless you drop a screw, and worth a shot. I'm pretty sure there's a DIY in the FAQ/DIY section that's worth a quick read, anyway.

And disconnect the battery before you start!
