The 4.7 is a great motor, but I think its transmission it has, has got a little something to do with how snappy it is. The 318 for the record has 5ft lbs of torque more and the same horsepower, but sooner in the rpm band!.
Personally I don't think you gain anything by swapping a 318 in, its one of those things where if you have either engine in your truck or Durango, just work with what you have. If anything you may gain a better aftermarket with the 318. Stock for stock its kind of a wash, if you're doing a serious build, go 318.
Gas mileage is a real subjective thing, everyone I know complains about their gas mileage in their 360 trucks, I can nail 18mpg regularly with mine on the Highway and recently with my Dad driving the truck (cuz of my owi) its had a all time best of 21!. That fat torque band of the 360 can actually give you better gas mileage than a 4.7 in a bigger vehicle, same reason why Diesels get better gas mileage in bigger vehicles....TORQUE.
