Default Ram 2500 5.9L stalling

Can someone give me some direction on what to look for possible causes. We are having trouble sometimes not very often tho of it stalling at initial startup. Only sometimes. But when you are driving it and you let off gas abruptly it almost always stalls. It seems to me like idle is low rpm's. Like 600 to 700. Is that typical idle

What have you done so far? What has been replaced/cleaned? Did this just start? A little background is always helpful.

only thing ive done with engine is plugs and reason was just to do it as I had just bought the truck. Hasnt been on road yet. It just started this but its been sitting quite a bit due to restoration to body, only starting and running it to move it. Changed tranny filter fluid and adjusted bands. Put in new O2 sensor up stream.

Start with the basics then. Check/clean/replace the IAC, clean the TB. Check for vacuum leaks. Wires, cap and rotor. Gas might also be bad if its been sitting for awhile. How's the plenum and catalytic converter?
