Hey I don't judge, different strokes for different folks. I owned a few Jeeps, never liked them. Back to your situation, there are vacuum lines back there and there is also a center head gasket that could be bad (you change that when changing your plenum . My opinion is due the plenum and see if it changes. Also why you have the plenum ifo you can check the vacuum lines in the back. They are really easy to see then. To my knowledge though the only vacuum line back there is for the CAD on 4wd trucks.

but if you go to get on it it just bucks and jerks.

That is what I think but I don't hear a loud sucking noise I'm thinking its maybe coming from the back of the intake next to the firewall area I went around and shot starting fluid around it and you could hear the motor change pitch.
You have a vac leak but not sure where it is. You can take the vac line off the intake and cap it then try testing it again. Did you check the plenum bolts(to head) to see if any where loose?
