OK, So I am all over the place at this point. I changed out the spark plugs and wires last night. And yes, it still had the same problems. Seems like it happens more at certain speeds, like in the 20-45 MPH range. I am not sure if I am looking in the right spot at this point. If I were to just take out the O2 sensors for testing, would I need to remove all of them? I am really starting to doubt that it is the catalytic converter now. Not sure where to go from here. Any thoughts?

When I test an O2 sensor, I use a digital volt meter, tap into the wire to the computer and ground the other. if it reads a variable .1 to .9 volts, while the engine is running, I know its good. If I get a steady reading then I know it is bad. For all I know this method could be outdated though.
