Sounds like you broke a vacuum line. I've done it in the past, accidently lean on one of these old brittle lines is a pretty easy thing to do. I would trace them out and make sure its all good. How good are your blend door and cruise control working?
What was the (ball park) outside air temp when you recorded this? Fuel trims waaay outta whack. Shorts are really leaning while longs are really richening. ECM will compensate for all sorts o' combustion chamber short comings, but that's way outside normal parameters. What brand O2's again? Looks like you've either got some kinda fuel injector problem, clogged cat, bad ignition in 1 or more cylinders or maybe even PCV acting up.
Yeah from what I've read the fuel trim should ideally be at 0 but in reality it should normally be anywhere from +10 to -10 and anything outside of that indicates a problem. I'm leaning towards having a plugged cat at this point.

That was my first thought so I checked and rechecked all that. I recently (within the past 6 months or so) got the crazy vents and cruise control problems sorted out. I replaced all the vacuum lines and connectors and added a couple of vacuum reservoirs.

I'm going to check for a blown plenum as well but I don't think that's it. I haven't done anything to it for a couple days due to back problems.

The only thing left that I can think of is dirty fuel injectors or big vacuum leak. That said, the cat is an integral part of the fuel delivery system via the O2 sensors, so removing the cat may have effected the fuel trims as well.
Turns out all of the exhaust manifold nuts and studs were loose, one nut was even missing. Not loose enough to make noise but enough to cause problems. Runs good now and everything is within acceptable parameters. I still plan to replace the IAC because...why not.

Keep the old one because you know it works and is a good spare. I do this with all my working sensors I take off vehicles. You're going to be using a new Mopar part?

Yup, whenever I fire the parts cannon I always keep known good parts.
