Solution was spark plugs. Turns out the NGK's I put in a couple thousand miles ago didn't align with my 360s belief system. Set of Autolite 3923's and she's starting and idling smoother than ever. Feel stupid for pulling my hair out for so many hours messing with this over something as simple as damn spark plugs. Lesson learned, never assume just because you replaced something recently it can't be causing you problems.

 

Autolite certainly makes a tough spark plug. I'm running Autolite double platinum plugs in my motor and have had no issues whatsoever.
