On your 1st question, what is your goal in cleaning the intake or valves, is your engine running poorly? Is the pcv port clogged? Most of those things will be more thoroughly dealt with by removing the intake manifold and cleaning it out through the plenum. You are probably better of cleaning your valves that way or you could use some fuel system cleaner that contains PEA (polyether amines) such as Redline. If you are sure your intake valves are carboned up you might want to run Redline through a few times. The Redline will not clean out your intake manifold though, only where the gasoline goes. If your pcv port is clogged it might be better to take the intake apart and clean so you don't knock the junk into your engine. But if that doesn't concern you I'd say you could probably gt away with spraying carb cleaner in the port and running a pipe brush through.
I don't know much about the 180 t stats, my research has shown it is "better" to stay at oem temp for mpg and such, the factory ECU setting.
If your gas gauge is not accurate then your fuel level sensor is bad which is built into the fuel pump unit. If your fuel pump is old its probably a good time to replace it.
Hope that helps.

If you have oil in the intake it's probably a leaking plenum gasket or bad pcv valve. Cleaning it won't solve the issue.

Cleaning the intake won't make it run any better unless you have some massive chunks of carbon, I'm talking bigger than like 1/2" diameter which is highly unlikely for the intake mani. You surely can clean it inside by spraying carb cleaner or running some of the Seafoam through the throttle body while the engine is running if you want to. But it probably won't do much but make the inside look a little prettier. The fuel system cleaner product I recommended or similar with PEA in the ingredients will clean your intake valves without removing the intake manifold. But if your truck runs well already you likely don't have an issue so it would be up to you if you wanted to spray clean the inside for the fun of it. It won't hurt your engine using those sprays. Some people even use clean water slowly dripping into the throttle body to steam clean but the engine's gotta be hot for it to work best and you don't want to hydrolock your engine so you need to do it very slowly.
