Just thought I would give an update. I swapped out the Hypertech stat with a Stant Superstat 180 degree stat. Noticed an immediate difference. Got up to temp within 5 minutes and stayed there. Seems to be working as it should and the temp guage is right where it should be. Looks like the Hypertech stat was no good. Thanks for all the input!
