few questions... cats, exhaust, and chips

hey, i'm considering buy a second genoration ram, and i've heard that they have some bad cats on them. i dont know if i'll be buying a 318 or a 360. personally i want a loud truck, and yes i know running any sort of duels on either of these motors makes them really throaty but i want to be distinguished from the rest, say i were to run this truck at a track, would it be hard to take the cats completely off and run straits? i've heard it is a very difficult task to acheive. also does a good kn intake/airfilter help out quite a bit or not. and if i were to run a chip what would you suggest.. this will be a multi purpose off roading, and work vehicule
