I own a small detail shop and do lots of auction cars. I have lots of the Duplicolor fabric sprayers. Mostly the minivans get painted because they get so trashed by kids with juice stains and mud stains. I typically shampoo the carpets to get most of the crap off and before it dries, I spray a few light coats to "freshen" up the carpet. The moist carpet stops the paint from boogering up which makes it look like crap and very rough to the touch. it hold up rather well believe it or not. Keepin the carpets moist for that until it's down is key. It also allows the color to soak into the fabric instead of just coloring the otside if you will which will wear the coloring off relatively quick.
As for painting plastics, keep'em out of the sun and you will be fine. The sun will heat up that black and bubble the crap out of it! Get tinted windows and use a winshield shade/sun blocker. Also, keep all chemical off as they will bubble the paint as well. If you prep right, the color won't chip or peel, but it will still bubble if not treated with care which is tough because your gonna have to clean now and again. Straight up warm water on a cloth is the only thing you can do.
As for cleaning the windshield after your dash is painted and the door windows.....Spray the windex or cleaner on the rag and then wipe the windows or else the oversray will get onto the paint and casually eat it anf bubble it. Window cleaner is made with ammonia. it's a toxic chemical that does eat things including the plastic housing on your headlights that everyone loves to clean with windex. Big no-no!!!

Aren't you worried about resale?? I know if I was looking to buy a used truck, I would be very leery about buying a truck that had the interior spray-painted. As a matter of fact for me I would look in the window and walk away!!
