Exhaust pros and cons.........
Hemis from the factory are poor tuned dogs. A CAI, good tuner and a real dual exhaust system is the only way to go, if you want to see the full potential of your ride. Remember an engine is an air pump, and what it takes in it has to move out effeciently, and two cylinder banks of an engine going into one 3 inch pipe will not move the air like it needs to be moved, but two pipes totaling 5 inches will. Just trying to be helpful, but I'd save your pennies for that extra pipe, stock or modified, plus get rid of the stock log exhaust manifolds. I know some of you have never seen what one looks like off of the truck, but they are so bad, I couldn't believe the truck even ran with them on, as restrictive as they are

Who in the world told you that hemi truck factory cats were high flow. They are one of the the most restrictive cats I've ever seen. You can hardly see light through them, whereas a real hi flo looks almost like a straight through pipe. I know, I've replaced mine and the factory cats are nothing like hi flos

I honestly cant tell the power difference between true duals and a single in/ dual out muffler system. There may be a slight sound difference. As long as your not using chambered muffler/s then both system work great. I dont know about valve problems or at least I dont think i have heard anyone having valve problems from exhaust. I would at least keep the cats on just to give a little back pressure. The stock cats are high flow cats anyhow and dont hurt a thing.
