The new rims would help more, push them out a little bit. Give you a little more room.

Actually I dont really know for sure. Since this is the first time ive seen this work, I cant answer with a 100% guarantee. In theory you would be alright, unless it caught the inner part of the tire on full lock

I got a 2" level on it and thats it but thinking about getting a 1" or 1.5" in the rear.

That would be a super size rake, Meaning, the back end will be up higher than the already lifted front. Nothing wrong with it, It may actually make the truck that much more impressive. Next to other stock trucks.....
